How can it possibly be June! Seems like yesterday we were shoveling snow! With the warm weather comes our annual BBQ season at the Fortress Golf Course. This year we’ll start our first BBQ on June 19th and we’ll run five Fridays through July 24th. The only Friday we won’t do a BBQ is July 3rd – just too many other activities on that weekend. My BBQ chefs have come up with four very different menus for this season – something for everyone.
June 17 and July 24
Kansas City Style BBQ featuring meaty pork spareribs and slow smoked beef brisket along with corn on the cob, baked beans creamy cabbage salad and potato salad.
Canadian Shore Lunch – if you’ve ever gone fishing in Canada, you know that one of the highlights of each day is a shore lunch featuring the morning’s fresh caught walleye.
Plus, those of you who regularly attend our Lenten fish fry buffet in Z Chef’s Café should enjoy this offering. Included with the walleye will be flame grilled chicken, fried potatoes with bacon and onions, corn on the cob and a variety of cold salads.

Tender New York strip steaks on the grill served along with BBQ chicken, a baked potato bar, macaroni & cheese and lots more. Normally we go through about 800 steaks!
The Hawaiian Festival – my personal favorite. We slow roast a whole hog for twelve hours just like they do at a luau and serve it with honey mustard chicken, Maui fried rice, sweet potatoes and tropical fruit salads.
