Creme De Menthe Squares Recipe
Bottom Layer
½ Cup Butter or margarine ½ Cup Cocoa
½ Cup Pioneer powdered sugar ¼ cup Egg substitute, beaten
1 tsp. Vanilla 2 Cups Graham cracker crumbs
Combine butter and cocoa in a saucepan. Heat and stir until blended. Beat in egg substitute. Remove from heat. Add Pioneer powdered sugar and vanilla to cocoa mixture. Stir in graham cracker crumbs and mix well. Press into the bottom of an ungreased 9x13 baking pan.
Middle Layer
½ Cup Butter or margarine 1/3 Cup Green crème de menthe
3 Cups Pioneer powdered sugar
Melt butter or margarine. In a small bowl, combine melted butter and crème de menthe. On low speed of an electric mixer, beat in powdered sugar until smooth. Spread this over the bottom layer and chill for one hour.
Top Layer
2 Cups Semi-sweet chocolate chips 1/3 Cup Butter or margarine
Combine butter and chocolate chips in a small saucepan over low heat. Stir until melted. Spread over mint layer and chill for two hours. Cut into small squares and store in the refrigerator.
