Chicken Fajitas Recipe
Ingredients:
-2 green peppers - cut in 1/2" strips
-1 red pepper - cut in 1/2" strips
-1 Spanish onion - cut in 1/2" strips
-4 (6 oz.) chicken breast - cut in 1/2" strips
-1/2 c. corn oil
-6 lg. flour tortillas
-2 tsp. cumin
-1 tsp. cilantro
-1 tsp. cayenne pepper
-1 tsp. oregano
-2 tsp. salt
Preparation:
1. Heat oil to medium heat in large skillet.
2. Add chicken breast strips and saute on high heat until 3 quarters done.
4. Add peppers and onion to skillet.
5. Mix all spices together.
6. Sprinkle seasonings on chicken, peppers, and onions.
7. Saute until peppers and onions are soft.
8. Heat skillet to medium heat - heat tortillas on both sides - no oil.
9. Remove tortillas from skillet and fill center lengthwise with chicken,
onions, and peppers.
10. Top with salsa, guacamole, and sour cream.
