Kingston-style "Jerk" Chicken Recipe
Ingredients:
- 4 (6 oz.) chicken breast - 1 TBSP. allspice - ground
- 1 TBSP. thyme - dried
- 2 tsp. black pepper - ground
- 2 tsp. rubbed sage
- 1 tsp. nutmeg
- 1 c. onion - diced
- 2 TBSP. salt
- 2 TBSP. garlic - granulated
- 2 TBSP. sugar
- 1 c. white vinegar
- 1 c. lime juice
Preparation:
1. Add all ingredients to an extra large mixing bowl.
2. Whisk with wire whip until all ingredients blend.
3. Place chicken breasts in marinade. Put chicken breasts and marinade in refrigerator for two hours.
4. Remove breasts from marinade and shake off excess liquid.
5. Grill over hot coals of a barbecue - approximately 5-6 minutes on each side until done.
