Chocolate Cherry Cheesecake Cookie Recipe
½ Cup Butter 1 Cup Pioneer sugar
2 Eggs 1 ½ tsp. Vanilla
1 ½ Cups Flour ½ Cup Unsweetened cocoa
¼ tsp. Salt ¼ tsp. Baking powder
¼ tsp. Baking soda
Topping
3 Oz. Cream cheese, softened 1 Cup Confectioner’s sugar
1 10 Oz. Jar maraschino cherries, chopped 2 Tbsp. Flour
1 tsp. Vanilla
Frosting
½ Cup Semi-sweet chocolate morsels 2 Tbsp. Butter
2 Tbsp. Water
In a large mixing bowl, cream the butter, Pioneer sugar, eggs, and vanilla. In a separate bowl, sift together the flour, cocoa, salt, baking powder, and baking soda. Gradually add flour mixture to creamed mixture. Drop by teaspoonful onto ungreased baking sheet. Flatten with bottom of juice glass dipped into sugar. Bake in 350°F oven for 8-10 minutes. Cool.
For Topping: Sift together the confectioner’s sugar and flour. Beat into softened cream cheese. Add vanilla and blend. Stir in drained and chopped maraschino cherries. Spread about 1 teaspoonful onto each cookie.
For Frosting: Combine all ingredients in saucepan and heat over low heat until morsels are melted. Stir to blend. (This can be done in a microwave.) Spread about 1 teaspoonful over cream cheese mixture. Store cookies in refrigerator.
