Each autumn, this seasonal favorite returns to Zehnder’s Restaurant, bringing with it a tradition that stretches back more than 60 years. Locally grown, hand-harvested and prepared the same simple way our guests have come to love, Blue Hubbard Squash is a true taste of Michigan fall.
Locally Grown, Traditionally Prepared
Our Blue Hubbard Squash is grown close to home by local farming partners, including Weiss Farms, located just a few miles southeast of Zehnder’s, along with Ortner Farms in Reese and Munch Farms in Bay City.
Sourcing locally means the squash travels only a short distance from the farm to our kitchen, helping us serve it at its seasonal best.
And when it comes to preparation, we don’t overcomplicate a good thing. In Zehnder’s kitchens, Blue Hubbard Squash is prepared simply with butter and brown sugar. The result is rich, smooth and naturally sweet — the comforting flavor guests have looked forward to each fall for decades.
A Frankenmuth Tradition — Unloaded by Hand
The arrival of Blue Hubbard Squash is an event of its own at Zehnder’s.
Every fall, members of the Frankenmuth Varsity Football team lend a hand unloading the freshly harvested squash at Zehnder’s Restaurant. Because Blue Hubbard Squash can be easily damaged or bruised, each one is carefully unloaded by hand.
Over the years, what began as a practical way to handle the harvest has become a beloved community tradition — bringing together local farmers, students and the Zehnder’s team to welcome one of fall’s most anticipated ingredients.
When Can You Get Blue Hubbard Squash?
Blue Hubbard Squash returns to Zehnder’s Restaurant in September 2026, with the exact start of the season dependent upon this year’s harvest.
Once it arrives, it will be available throughout the fall while supplies last.
Because this is a locally grown seasonal item, Mother Nature ultimately decides just how long the season will last!
