My daughter used to work at the Opryland Hotel in Nashville. If you’ve never been there it’s a massive 2,800 room property; it’s like a little city. On one of our visits her boss was showing us around the place. While the “front of the house” is visible to just about every guest, what goes on behind the scenes is mind boggling. An amazing connection of kitchens, hallways, prep areas, storage, laundry, etc.; everything needed to make this giant property hum seamlessly.

We got back to his office and he hands me a brochure of a machine he had just purchased. “Don’t even think about this,” he assured me, “just order one.” It was a really attractive machine that slices and squeezes whole oranges turning out fresh juice. Well we ordered one and put it into use, right on the floor of Elf Hollow Café in Zehnder’s Splash Village. A whole case of oranges is loaded into the hopper, and with a single push of a button the whole thing starts up, oranges fall into place, get sliced, squeezed, the peel disappears into a bin, and voila! – fresh squeezed orange juice.

That was in 2014 and we were so impressed with the machine and the resulting fresh juice that we bought another for Z-Chef’s Café in the lower level of our flagship restaurant, Zehnder’s.

Well on Monday, January 27th, Angie our Elf Hollow Café manager dropped the ONE MILLIONTH ORANGE into the hopper! Never thought I’d get so excited about oranges.
