Now that the holiday season is over and the reality of winter begins to set in, it’s time to start up ZChef’s Friday Night Fish Fry buffet. The star of our show, as always, is Great Lakes yellow perch. In June of 2009 we hosted the annual convention of the Order of the Golden Toque, America’s top 100 chefs, of which I am a member. As I reviewed proposed menus for this three day event with my culinary staff, we decided to feature all local Michigan ingredients including yellow perch at the opening icebreaker reception.
Unbelievable positive response! We had chefs from all over the U.S. and Europe, many who had never experienced the unique sweet, nutlike flavor of our Great Lakes yellow perch rave about how good they were and asking where they could buy them.
There are inexpensive white perch and ocean perch available on the market that many restaurants serve on seafood buffets during Lent, but they don’t even come close!
We’ll run our buffet from January 9th through Good Friday, April 3rd.
We have a four week cycle of menus, so you can come every Friday and enjoy different specialties every time. I know – you’re here for the perch!
Each week’s menu includes, along with our golden lightly breaded perch, a soup or bisque, selection of salads, peel and eat shrimp, shrimp entrée, chicken entrée and all kinds of vegetables and potatoes, desserts, plus the stir fry station where you can pick and choose your own ingredients.
