Join us for Zehnder’s Wild Game Dinner hosted by Executive Chef John Zehnder, CEC, ACE, HGT, AAC on Wednesday, November 2, 2016 starting at 6:30 pm. I love autumn in Michigan! Autumn’s spectacular color display combined with cooler temperatures are but a background for the rustic flavors and foods here for just a short time each year. I have always tried to cook seasonally to take advantage of what nature offers. That, I think is what God intended. I’ve included many of my favorite fall foods on this menu and taken liberties to use them in creative ways – that’s what chefs do! Enjoy a relaxing dinner while you pick up tips and ideas and take home all the recipes.
Amuse-Bouche – Duck, Bacon and Charred Sweet Corn with Wonton Thai Plum Sauce
Soup – Smoked Michigan Rainbow Trout Bisque topped with Whitefish Caviar and Creme Fraiche, Multi Grain Rolls and Sweet Cream Butter
Salad – Burrata Cheese and Heirloom Tomato Salad with Fresh Basil drizzled with 15 year old Balsamic Vinegar and rare extra Virgin Olive Oil
Entree – Wild Boar Schnitzel with Michigan Chanterelles, Garlic Roasted Artichoke, Butternut Squash AuGratin
Dessert – Sour Cream Apple and Black Walnut Pie drizzled with Shagbark Hickory Syrup
